From what i can understand form this description is that you need 2 function for your e-commerce website , 1 when payment for order is completed stock should get updated and 2 Add a functionality to manually change the quantity in cart ,which is very easy and i can complete this in 2 days + 1 to test everything

In which the calculation of TAX and Stock will be automated. you will receive an E-Mail if the stock is going Short and you can just enter the price of your product TAX will be calculated and added to it Automatically. It would not look less than a professional website, where your customers can come up, signup and create an Account, Login and then Shop. They can search for their desired product and can add it to their cart. You can also provide COUPON CODES if you want and they can use them to avail some discount.
