The key to dynamic user manuals is being able to provide content on two different "speeds" so that users can digest content without feeling left behind or bored. This is often done by providing content via video for actual, literal steps while providing popups where appropriate. By answering questions as they pop up in the user's mind you keep people watching. Because even if you aren't selling something, any type of content (manuals included!) reflect on your business. Using pop up answers also benefits the viewer so they aren't having to remember things if all questions are held to the end. Of course you don't want to go overboard with pop ups either because it can be distracting. Like everything, there's a balance! I have deep appreciation for all education content and would be thrilled to participate in your user manual project. I will be using Final Cut Pro to polish any screencasts without making things seem "overly produced" I'm brand new to this site so if nothing else, you can be confident I want to make a good impression and earn my first review :)
