What my thought on solving this: In my opinion, the estimated time for due date of an order can be calculated by determine the mean time of one order to be done. This can be done by collecting/recording/estimating time to complete one order, and than use the data to find the distribution or trend of the data ie normal distribution, exponential distribution etc. Based on the distribution, the expected due date can be found. But this is only my idea and opinion, we need to discuss more with your actual data. My rate is low because I am new to this platform, but I assure you my service and work are professional.
