Create a chart for a wordpress website

I have the need for a chart to be made on my existing wordpress site. The data would be entered in for one candidate only. Once all the data is created for the candidate I would save the created chart as a PDF. This does not need to be built in. I say this because I can just print the page to a PDF printer to get this output. I will need this page to be private in our site (not accessible to people who are not logged in) Also it would be beneficial if the data could be saved so I could come back later to finish it. I want to be able to enter data into fields in the webpage and have the chart populate. I will attach 2 samples of the chart I would like. The data will be entered into fields in the webpage and the chart would update. From looking at the attached examples you can see that the data fields I would enter data in would be;
Employer
Full time Job
Boss Rating
Reason Left
Date hired
Date left
Starting Pay
Leaving/current pay
Once the above fields are populated the chart would be created from that data just like it is in the example. There must also be a mechanism for entering "no full time job" like in the attached examples. It is also important to me that this created solution will not be impacted by later updates to the wordpress site, themes, plugins, Etc.
