I have experience using arduino, servos, and potentiometers. One time I made a small robot which used two continuous rotation servos as motors and an infared distance sensor to avoid obstacles. A question I have is how many buttons do you plan to have, I'm guessing you want a button for each servo to select it, and a button for each servo to save the position, and maybe a button to run through all of the positions on the servos.
