you can readily use ESP32 for your WiFi and BLE tasks, though ultrasonic sensor is not that power efficient typical example of that sensor HC-SR04 pulling around 15mA, while lidar based one ie: vl53l0x pulls around 6mA ESP32 won't really run on coin cell ( these cells have much higher internal resistance) , 3.7V LiPo battery will do ESP32 can work in sleep modes to save battery power
