Mac file access troubleshooting on site to site / SSL VPN with Windows Server 2012/2016

We have set up a new Windows Server 2016 at a client and also a site to site VPN using Sonicwall TZ500 and TZ400's at 3 other locations. More than half the users are using Mac OS X 10.11 and many are using NetExtender and MobileConnect to connect to the network, while many others are sitting in the site to site networks. The issue we are seeing is that when interacting with documents in the file shares, PARTICULARLY excel files (most users are using up to date office 2016 and some using up to date 2011), files are opening slowly, and more importantly, files are taking significantly longer to save (spinning wheel ranges from 15 seconds to 2 minutes), users are getting errors when trying to save, files occasionally get corrupted, etc. We are aware of tons of people online suffering from SMB related issues exactly like ours when using Mac OS interacting with Windows Server. What we need is a consultant that has had to suffer through these issues and has come up with proven and tested solutions for them. PLEASE only submit proposals or bids if you have dealt SPECIFICALLY with these matters and have immediately relevant suggestions on fixes you can implement.
