Fix My GRE Tunnel Bash Scripting Issues

We run an email software company with a boutique clientele.
A former SysAdmin came up with a procedure for tunneling IPs from 1 server back to our MTA server and 1 IP to a hosting server so we can host a domain name. This is all accomplished using Bash Scripts he wrote. He has since left and his documentation is sparse and esoteric at best.
I have been able to setup Tunnels to the MTA with it but where I am running into issues is when it comes to the separate tunnel for the IP to the hosting server. I always end up with multiple entries in the routing table and I cannot get rid of them.
I need this fixed, scripts (and or procedure) possibly improved (automation) and documented clearly so anyone with sysadmin skills can execute this task quickly.
